You’ll need olive oil, a leek, fennel, carrots, butternut squash, garlic, ginger, turmeric, salt, pepper, low sodium vegetable broth, and coconut milk (ignore the bananas in the picture, I just forgot to move them lol). I also cubed and roasted the leftover butternut squash with olive oil, garlic, salt, pepper, and thyme, and it was delicious too. I really love this soup! Have a great and healthy week everyone! 😁🥰🙏
