I’m due for a rainbow diet post! I try to eat a variety of colors of vegetables and fruits every day to maximize variety of vitamins, minerals, and nutrients in my diet, (color is easier for me to track and remember than all of that, lol). While I was closed, I realized I had more time and energy to make more complicated and time consuming meals too. Fun! It’s been years since I made Beef Bourguignon, and it’s just a good as I remember! It’s not exactly the Julia Child recipe, but it makes fewer dirty pots and pans to wash, and simplifies a few steps. I like mine over mashed potatoes, and I added sautéed asparagus on the side for more green. Yummy! What adventures in cooking did you have this summer?
