It’s a delicious rainbow of food! I was telling a friend I’m indulging in comfort food, but I have to eat mostly healthy food or I get reeeeeeally uncomfortable. My body feels like garbage if I don’t eat well and exercise regularly, but I definitely eat DELICIOUS healthy food, and I only do exercise I enjoy! How is it self care if you’re not enjoying it? I love to cook, grill, and especially bake (I’m limiting myself to baking once a week 😁), so preparing food is a fun, therapeutic activity that makes me happy, and of course these healthy, nutrient packed meals make my body happy! This meal (which actually made three meals) is loaded with omega-3 fatty acids, protein, potassium, and lots of vitamins and minerals! I like looking up why all these veggies and food choices are good for me. It makes me feel good, and I feel better about eating dessert! Balance and moderation works for me! 😁🍽
This meal is grilled cedar plank salmon topped with lemon and Cajun seasoning, grilled sweet potato fries (I like them with olive oil, salt, pepper, garlic powder, onion powder, and paprika), and oven roasted Brussels sprouts, apple, dried cranberries, and pecans seasoned with olive oil, salt, cayenne pepper, and red wine vinegar. The roasted veggie recipe is from a magazine of roasting recipes by Better Homes and Gardens and on their website “Roasted Brussels Sprouts with Apples, Cherries, and Pecans.”
